What are Texas Hot Link Sausages?
Hot Links are a Meat & Seasoning Sausage usually grilled on the Barbecue.
They are a Pork & Beef Sausage blended with mild spices & Cayenne Pepper to bring a bit of heat to your bite. The original Texas Hot link Sausages came from Pittsburgh, East Texas in the late 1800’s. A gentleman by the name of Charlie Hasselback (German descent) starting making & selling these as an un cooked product, he would go on to sell these Smoked & cooked with other sides.
How do we make Texas Hot Link Sausages?
We make our Texas Hot Links Sausages from ground Pork & Beef filled into natural Sausage Skins.
To make our Hot link Sausages we need to choose the best cuts of Pork Shoulder (degristled & trimmed) & Beef (chuck, brisket, lean flank) to ensure the right texture. All the meat has to be very cold to help with the grinding process, the cuts are placed into a chopping bowl & cut down into smaller pieces. This mixed Pork & Beef pieces are put through the grinder / mincer on a coarse grind, the seasonings are added to the meat & with a little added water (helps to create a more thorough blend). The whole mix is then passed through the grinder again, ensuring an even texture & flavour.
This way you get a far better result for more blended Texas Hot Links sausages, or any sausage we make.
The second stage to making Texas Hot Link Sausages is to get fresh natural Sausages skins or casings on to the filling machine. The mixed meat blend is squashed in to the Sausage Filler machine & the skins are filled to a thickness of just over a thumb. Once filled, the Sausages are made by twisting the length of sausage into 7 inch horseshoe shapes, these are then cut & hung on to racks. The racks are placed into the chiller overnight to let the sausages absorb the seasonings & “Set Up” overnight.
How do we pack our Texas Hot Link Sausages?
Sherwood Texas Hot Link Sausages are Vacuum Packed as twin packs.
We pack our Hot Link Sausages first thing in the morning because they are very cold from hanging overnight in the chillers at 1-2°c. The Sausages are placed into our Recyclable Freezer Friendly pouches & Vacuum Sealed. We pack these as a Twin pack 360g for retail or online deliveries & we have our Wholesale Bulk Pack (20) for BBQ Smokehouses. The Hot Links are then labelled with full farm to fork traceability & packed into plastic reusable crates. The crates are placed on pallets & sent straight into the Blast freezer where the temperature is -25°c.

This method of packing keeps any cross contamination to a minimum & ensures that the Hot Links are kept in perfect condition for 24 months, as if they had just been made.

How do you cook Texas Hot Link Sausages?
Most people would opt to cook these on the Grill or the Barbecue.
Texas Hot Links were created as a Barbecue styled sausage but, these can be cooked in the oven or the air fryer & used to be an added ingredient in meals rather than the main piece. IMPORTANT; please ensure that the meat juices run clear or the internal temperature of the meat is a minimum of 75°c before serving.
How to prepare Texas Hot Link Sausages before cooking;
- Place frozen Hot Link Sausages in fridge to thaw naturally at a lower temperature.
- Remove from the fridge (keep in packaging) & leave in ambient temperature for 20 minutes before cooking.
- Remove from packaging & pat dry with paper towel.
How to cook your Texas Hot Link Sausages;
In the Pan or Skillet;
- Heat the pan over a medium heat.
- Drizzle a small amount of Olive Oil in the pan.
- Place the Hot Link Sausages carefully into the pan (helps prevent any oil spitting on you).
- Cook for a few minutes each side until the juices run clear or internal temp of 75°c has been reached.
In the Air Fryer;
- Set Air Fryer temperature to 190°c.
- Spray a light coating of vegetable oil into the basket.
- Place the Hot Link Sausages evenly spaced into the basket.
- Cook for 7-8 minutes, you may wish to turn them half way through & check for internal doneness.
- Always ensure the Hot Links are thoroughly cooked inside.
On the Barbecue;
- Place the Texas Hot Links on the grill over direct heat for Hot & Fast, indirect heat for a longer cook for a more Smokey flavour.
- Cook for a few minutes each side (direct heat) checking they do not burn
- Cook for 10 minutes each side at a lower heat (indirect heat) finish over direct heat to Brown them off.
- Always ensure the Hot Links are thoroughly cooked inside.
