The tender twin packed Steaks are placed into Vacuum Sealed Recyclable Pouches (454g approx), ideal for stocking up the freezer. Information about Gammon Steaks.

Tender sliced Gammon Steaks cooked under the grill with a little seasoning are delicious & tender. We have cut bigger Steaks that are better portion sizes for family dinners. The big portions are just right to reduce food waste & increase value for money. The natural Gammon Steaks are 8 ounces (227g) each packed as a Twin Pack for the freezer. This is a new product to the Sherwood Menu & is created using the same Pork as our Horseshoe Gammons.

What are Gammon Steaks?

These are individual Steaks cut from Whole Horseshoe Gammons.

Gammons come from the Pork Leg, they are boneless consisting of main Leg muscles with the Rind / Skin left on. The Boneless Leg Meat is left  in Brine (salt water) for 10 days until the meat is cured giving it its distinct flavour. A whole Gammon typically weighs approximately 4-5Kg.

How are Gammon Steaks cut?

The Gammon Steaks are cut from the Whole Boneless Gammons.

Once the Whole Gammons have finished soaking in the Brine Solution, they are placed on racks & left overnight in very cold chillers to drain excess water & to firm up. These are now ready to slice into Steaks. The expert butchers use a specialist machine to cut “across the grain of the meat” to 6mm thickness. The thicker cut Steaks will retain their natural moisture & flavour easier because they are a little thicker.

The Pork Leg has stronger muscles & like Beef, has some of the best roasting joints; Topside, Top Rump (Thick / Knuckle) or Silverside, these cuts are in Gammon Steaks.

How are Gammon Steaks packed?

The Gammon Steaks are Vacuum Sealed in recyclable Clear Pouches.

To create the safest meat possible we pack the Gammon Steaks as soon as they are cut. This reduces any natural bacteria growth & keeps the brined meat moist for a better tasting results when cooked. The Vacuum Sealing process sucks the moisture back into the Steaks. The Gammon Steaks are placed into Recyclable Cardboard Boxes or reusable plastic crates,  palletised & “Blast Frozen” to -25°c & delivered to our distribution depot.

All our production facilities are BRCGS / IFS approved  that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. The low temperatures help to keep the meat from losing its natural juices, this makes juicier Gammon Steaks.

The Recyclable Clear Pouches protect the Steaks from Freezer Burn, Cross Contamination from other foodstuffs in your fridge, any handling when being picked & packed for your home delivery. The Recyclable Clear Pouches are helping to reduce our Carbon Footprint with customers recycling responsibly at home, & we are now using stronger thinner bags helping reduce plastic usage.

Having top grade Pork allows us to make “Restaurant Quality” pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.

Our choice of preferred Pig breed is “Pie Train Pig”, this is found mainly in the Wallonia region of Western Belgium.

These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat with a low PH level.

We select Legs of Pork for UK production before they are then shipped to production in the UK where we produce our Gammons for cutting into Steaks.

How to cook Gammon Steaks.

The most popular way to cook Gammon Steaks is under the grill.

These Steaks are really easy to cook, the Grilled option is most popular & simple, they can also be baked in the oven, done in the Air Fryer.

  • Remove from the fridge once fully thawed & leave on the side in the kitchen for 30 mins.
  • Remove your Steaks & rinse gently under cold water.
  • Pat the Steaks dry & snip through the skin at the edge every 25mm to prevent it from curling up during cooking.
