Our Pork French Rack is the rib end of the pork loin that has been French Trimmed the same as the best end of lamb or French trimmed lamb rack. This stunning piece is perfect for cooking as a roast centrepiece or for individual Pork Tomahawks ( just like our 2 bone tomaporks ). The full pork French rack has 10/11 finger bones on it & we have been left in to add to the flavour of the delicious loin meat. Selected from our finest Pietrain Pigs; the flavour & meat are always first class from our young pork.

Pork French Rack 10 Bone:

Our expert butchers have removed all the back bones to make these an easy carve roast or steaking joint, at approx 3.5-4 kilos, that will feed 8-10 people. The piece is the beef equivalent of the wing rib & ribeye roast, so would look like sirloin steaks & ribeye steaks if sliced into bone fewer steaks. The sirloin & ribeye are two of the best cuts with great flavour that are easy to cut because they are very tender & easy to digest.

The rind or skin has been removed from the outside of these because it will allow you to score the remaining soft fat so you can penetrate the meat with your salt or other seasonings. The remaining fat will add flavour to the meat whilst keeping it succulent during your cook, even if you decide to cut this into Pork Tomahawks, the slip of outside fat will keep this moist & add to the flavour.

The colour of the Pork French Rack is a light rich Pink as you would normally expect from quality pork that has been cared for from farm to fork. The way that the pigs are handled has a major impact on the texture & colour of the pork meat, the gentle moving of pigs means there is no bruising or discolouration & the calm manner that is maintained will lower their stress levels to reduce the adrenaline to make the meat much more tender.

Buying meat online can be an expensive task as the overheads & prices for pigs, cattle, lamb etc are always increasing, as we are able to make larger quantities of products, we can achieve a more competitive buying price to then be able to pass this on to our customers. The pork French rack has been fully trimmed & prepared as an easy to use piece for home cooking, & as there is little or no waste from this, it will save you time & money; no preparation & no trimmings to pay for.

The quality of our pork offers a great source of vitamins, minerals & protein; these are all essential ingredients towards a healthy lifestyle diet. The fat can be removed after cooking, but “fat is flavour” as they say, so you can enjoy a delicious pork dinner without having to sacrifice the flavour. Many recipes will have lean pork as the main meat ingredient & these as pork tomahawks rubbed with a light low sugar/salt seasoning is no exception for these recipes.

We take great care when cutting & packing our pork French racks because it brings a longer shelf life & a fresher flavour to the meat. The cutting rooms we produce all our products in are low in temperature to keep the meat cold & stop it from losing any moisture. They are very hygienic & are under very strict guidelines to produce the safest meat possible, through keeping the natural bacteria found in meat to a minimum. The high volume of faster throughput efficiency helps to create a lower carbon footprint.

All our production facilities are BRC Approved & we are always using local herds to support local farmers.

The Frenched Racks are cut & vacuum packed within a few minutes into clear recyclable pouches that gently hold the shape of the meat, & the vacuum process sucks any natural moisture back into the eye of the meat. The pouches protect the piece when being frozen down to -18°c immediately after packing, during the delivery process, when in your fridge/freezer at home & when bringing up to temperature before cooking. The packaging will lock in all the natural flavour & moisture to ensure you have the perfect Pork French Rack when delivered.

Our choice of pork is something we have carefully considered, as we find this makes exactly what our customers need for specification, flavour & taste.

There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.

Having access to a large volume of a good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have a daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France. Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.

The Sherwood full Pork French Rack is something that will be tasty, affordable & filling. The simplicity of the piece will make this very easy to cook, but give you choices of what to create from it by way of Tomaporks, small roasting joints or the full centrepiece for the guests/family dinners.
