The pork shanks are approximate 700-grams each & have been carefully prepared by our expert butchers to have excess fat removed. These have a little of the skin left on to protect the meat from drying out when cooking but makes for great pork crackling. The two bones inside are cut top n’ bottom, & are easily removed after cooking, these will help the flavour because meat always tastes better on the bone.

The texture of the pork shanks is coarse as these are cut from the legs, the muscles in the legs work hard every day & become very fibrous. This is perfect for a really good flavour & these are certainly not a bland cut of meat. The meat will break down easier during a low & slow cook, this will pull apart & be very easy to chew, ideal for younger mouths.

You can save money buying these pork shanks to get soft tender pork meat at a great price. These are often seen on menus in German restaurants as they love pork & they can cook these to perfection with delicious sauces.
The pork shanks are produced in clean temperature controlled cutting rooms because it is perfect to make sure we deliver the best product for the best results at home or in the restaurants. The lower temperatures stop the meat from losing too many natural juices & also help minimise the growth of natural bacteria found in meat. The products are frozen down very quickly to preserve the meat perfectly until ready to cook.
All our meat is cut & packed very quickly; this combined with the low temperatures will produce perfect meat. We place the pork shanks into recyclable clear pouches because we vacuum seal them to allow the natural juices to be sucked back into the meat. The pouches also hold the meat in shape & protect it from any other flavours. When bringing meat up to room temperature before cooking, the pouches will prevent it from drying out or from any flying visitors!

We are very aware of trying to go greener by cutting back on the use of plastic, using one bag for 2 pork shanks rather than single packing. The clear recyclable pouches used to package your Pork Belly are now stronger & thinner to help reduce our use of plastics to lower our carbon footprint. Both our trade & online clients recycling responsibly is a very important part of the recycling chain.
There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has a fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.
Having access to a large volume of good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
Our pork shanks are easy to cook in the oven, in the pot or on the BBQ. These make for excellent delicious midweek meals that are filling, tasty & affordable for the family. Simply remove from the freezer the day before, leave in the fridge (in the packet) to thaw slowly overnight.
Remove 30 mins before cooking from the fridge to bring up to temp, then lightly season before placing in a covered dish with a little water in, pop in the oven for a few hours, un-wrap, turn up the heat to crisp the skin for 15 mins, remove, rest & enjoy.
These can be brined overnight or soaked in red wine then seasoned in your favourite BBQ rub before placing on the BBQ for some serious smoke & fire. The results from this are stunning, it is an easy way to make new friends!
