Beef Canoes are sometimes referred to as “The Nectar of the Beef”, the Marrow Centres is what all the professional chefs are using in top restaurants. The thickest bones are the ones used to make the Beef Bone Marrow Canoes as they hold the most Marrow. If you are looking to add flavour to your soups & broths, or want to add to the top of a steak, or to enjoy as a roasted delicacy, then this is the perfect product for you. These Bone Marrow Canoes are cut & prepared ready for you to cook with little further preparation needed at home.

What are Beef Bone Marrow Canoes?

These are big Femur bones cut down the centre exposing the soft Marrow middles, shaped like a Canoe once the Marrow is removed.

The Beef Canoes are approximately 20cm long & the thickness of your wrist. They are light Yellow in colour with little meat attached, straight cut at both ends.

How do we cut Beef Bone Marrow Canoes?

All Beef Canoes are cut on an electric band saw by skilled butchers.

Once the fresh carcasses have had the meat removed from all the bones, the thick Femur Bones are selected & further trimmed so that no meat is left on them. The Femur Bones are taken into a further processing clean room for cutting. The skilled butchers cut across the Bones at both ends to remove the knuckles, the remaining centre section is carefully cut down the middle along its length. These are cut in large batches to save time & improve even cutting.

How are Beef Bone Marrow Canoes Packed?

Once the Beef Bone Marrow Canoes are cut into batches, these are then bagged into 2Kg Freezer Friendly Packs. Once the Beef Canoes are packed, they are labelled with full traceability, boxed up & frozen down to -18°c, keeping that “Just cut flavour” in the Marrow.

Our process of cutting, packing & freezing creates a fresh tasting safe meat that has a 2 year shelf life when stored at -18°c. The packaging stops “Freezer Burn” when stored at -18°c, & when kept chilled the packaging prevents cross contamination between the meat & other foods. The packaging keeps the moisture in the Beef Marrow Centres whilst chilled & when you are bringing up to room temperature before cooking.

The packaging is Freezer Friendly Recyclable & must be put into the recycle bin at home. We are now using thinner, stronger plastic to Lower our Carbon Footprint. How to recycle plastic

All our production facilities are BRCGS / IFS approved  that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria.   • Allow the Beef Canoes to thaw slowly in the fridge.
  • Rinse the canoes under cold water & place in bowl of cold clean water, leave overnight in the fridge.
  • Take the Beef Canoes & rise under cold water, then pat dry with paper towel.
  • Place on baking tray ready for seasoning.
