Carvery Beef Rib:
These have been created mainly as a large roasting joint of beef, but you can cut these into thick on the bone steaks if you want to put on the BBQ just like our “cowboy steaks”. If these are too large a piece for you, we also have a 2 & 3 bone version of these available to buy. Our carvery Beef Rib has been made as an oven-ready, easy carve piece & they only need to be seasoned before cooking in the oven or on the BBQ.
Our expert butchers cut the full fore rib from the fore quarter as a standing rib, they then “chine” the piece by sawing across the ribs to remove all the back bones because this then leaves only the finger bones attached.
The idea of leaving the finger bones attached is to enhance the meat, because we all know that cooking meat on the bone gives a better flavour. The texture of the meat is the same as RibEye steak & becomes very soft during the cook for that melt in your mouth experience. Serving as fairly thin slices with a rich thick gravy over them is something to be shared & enjoyed.
The Sherwood Carvery Beef Rib is cut & packed at a very cold temperature within minutes. We do this so that you get the best results possible because it limits exposure to the air & gives a much better shelf life whilst ageing in the bag. Secondly, the vacuum process sucks any natural juices back into the meat to make it as moist as possible, so those juices keep the meat soft & full of flavour. Bringing your meat up to room temperature in the bag will stop it from drying out.
