The Turkey Drumsticks are a large meatier version of the Chicken Drumsticks, the flavour of the Darker Leg Meat is richer than the Turkey Breast. The Drumsticks weigh approximately ***g each as they are a natural cut, weights do vary. They are an inexpensive cut of Turkey & because they have generous amounts of meat, they are great value for money. Drumsticks are great for baking & making stews, baking & making Pulled Turkey or for Smoking on the Barbecue Low & Slow.
What is a Turkey Drumstick?
The Drumsticks are the lower part of the leg between the Thigh & the Foot.
Turkey Drumsticks have a single large bone (Tibia) & a very slender bone (Fibula) on top, with thick darker meat & are skin on. The darker meat on the Drumstick has more flavour because it is a hard working muscle that’s more fibrous, hence the darker meat colour. One of the benefits of the fibrous meat is that the meat breaks down during cooking becoming the most tender part of the Turkey.
How are Turkey Drumsticks cut?
The Turkey Drumsticks are cut from the Whole Turkey Legs.
Once the Turkeys have their feet removed, the whole Leg has to be removed from the main carcasse by cutting through the joint at the Hip & Thigh. To separate the Thigh & the Drumsticks in the Leg, expert butchers cut through the soft cartilage in the knee joint. The Drumsticks are left with the skin on, with the joints checked for loose unwanted cartilage.
All cutting of the Turkey is only done once the Turkey Meat has reached a temperature of 3°c. This reduces natural moisture loss, helps the meat retain its texture & keeps the meat more succulent & flavoursome.
How do we pack Turkey Drumsticks?
The Drumsticks are packed in a Clear Recyclable Pouch, 2 per pack.
The Turkey Drumsticks are cut & laid out in freezer trays, then “Blast Frozen” to -25°c. The Drumsticks are put into Freezer Friendly Bags, 2 per pack sealed & labelled with full farm to fork traceability. Packing the Turkey Drumsticks straight from the freezer gives a 2 month shelf life when stored at -18°c. The process of cutting, freezing & packing in clean temperature controlled production, creates Drumsticks that taste as if they had just been cut, straight from the freezer. (best results are to thaw slowly in the fridge before cooking)
All production plants & slaughterhouses that produce our meats or products are BRCGS / IFS approved . All the air is filtered & refrigerated in the production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. Operated with the highest hygiene & temperature controls to ensure you enjoy the same taste & texture from all our meats.
The packaging protects the Turkey Drumsticks when handling during its delivery to the customer, from freezer burn when stored at -18°c, contamination in your fridge from other foodstuffs. The Turkeys are commercially reared in warm, environmentally controlled large barns, monitored 24 Hours a day & cared for by professionals. Regular feeding programs & space to move around gives them exercise enough to keep a healthier bird. The Turkeys are professionally bread to produce Grade A birds that have large breasts, that are not stressed, producing tender meat cuts without any bruising.
All our Turkey comes from local farms close to the production plants, we use Poland & Italy for our supplies. The trusted sources supply us with mainly Female Turkey for most of our cuts. The specialist production facilities use sustainable sources of Turkeys from farmers with long term relationships.
