Iberico Pork Rib Fingers are cut from in between the Belly Ribs, they are heavily marbled pieces of meat that have amazing flavour. These are very popular with BBQ Pitmasters as they are quick to Smoke & always very tender. The Iberico Rib Fingers are an excellent item to cook at home for something a little different than the regular BBQ Meats. The Vacuum Sealed Pouches are minimum of 500g for your convenience.

What is the difference between Iberico Pork & Regular Pork?
The Iberico Pork is generally more fatty & lighter in colour.
The Iberico Pigs are fed on a slightly different diet of mainly Acorns to give it the sweeter taste & extra fat marbling. They also forage throughout the mild winters in Spain for natural grass, roots, herbs etc, their diets are topped up with grains.
Regular Pigs such as the Pietrain (our preference for our other cuts) are fed commercially on cereals, meat & bone meal. They are a leaner more muscular Pig that grows faster & suits making our main BBQ Meat Cuts for better value results.
What are Iberico Pork Rib Fingers?
These are juicy Boneless Intercostal Muscles from the Belly Ribs.
As the name suggests (Fingers) they are similar thickness & shape as a Finger approximately 8cm long & 10mm thick. The meat is fairly coarse with plenty of marbled fat running through it, this keeps the meat moist adding to the taste when cooking. The Iberico Pork Rib Fingers are just like eating Boneless Belly Ribs. The Pork Rib Fingers are also called; Intercostal Muscles, Korean Rib Fingers or Pork Finger Meat.
How do we cut Iberico Pork Rib Fingers?
The Rib Fingers are cut from the in-between the Iberico Pork Belly Ribs.
Before any cutting is started, the chilled sides of Pork must be under 3°c, this reduces natural bacteria growth & the loss of juices for better tasting meat. The Rib Fingers are located on the Belly of Pork, expert butchers remove the Fingers with a special cutting tool that individually takes them out without any damage. It is important to take them out as a single piece so they don’t come apart during the cooking process.
The cutting facilities are under strict controls of the Health Vetenarians & BRCGS Approved to make our products the safest way possible. The temperature controlled environment keeps the Iberico Pork moist ensuring they taste as fresh as the day they are cut.
How do we pack Pork Rib Fingers?
These are sealed in Recyclable Clear Pouches.
The Iberico Pork Fingers are Vacuum Packed to protect the meat when delivered to your door. The pouches hold the shape of the pieces & the vacuum process sucks any moisture into the meat helping keep the flavour & to keep it moist during your cook. The packaging will prevent any freezer burn, any flavours from other food in your fridge tainting the meat & it prevents drying out whilst bringing up to room temperature.
Once the Iberico Pork Fingers are packed, these are placed into boxes or crates & palletised before being “Blast Frozen” down to -25°c, keeping the meat in perfection condition for a 24 month frozen shelf life.
To reduce our plastic usage we are using thinner stronger pouches for our Vacuum Sealed meats. We are putting more portions or larger pieces per pack to reduce this further, this lowers our Carbon Footprint. Through energy efficiency & higher throughput, we are able to make cost savings, producing a Greener product.
It is important that our customers at home or in wholesale businesses are recycling all packaging responsibly because this is the most important link in the “Recycle Chain”. We actively encourage all our customers to recycle & are always looking at new packaging ideas or ways to save energy.

We source locally to our production facilities to reduce our “Carbon Footprint” with lower vehicle emissions & less journey times, reducing stress levels for the pigs. Sourcing our Pork locally from Northern France, Belgium & Spain for some Iberico cuts ensures we have a sustainable supply of high quality Pork from good welfare farms.
Having A grade Pork allows us to make “Restaurant Quality” Pork cuts in larger volumes to supply homes & restaurants across the UK & Europe. Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium.
These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a great flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.
The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of Pork that guarantees great flavour.

Iberico Pork Fingers are usually grilled or cooked in a skillet for a few minutes each side.
The fibrous texture & marbled fat of Iberico Pork Fingers breaks down becoming very easy to bite & digest when cooked. The flavour of the Pork is very tasty due to the fibrous nature of the cut & diet of the Iberico Pigs, adding simple seasoning only enhances its delicious flavour. These are ideal for a starter or to serve as Finger Food at the BBQ or Dinner Party. When these are well seasoned & covered in a sweet sticky glaze…. they are irresistible!
Once cooked the Iberico Rib Fingers will need covered & rested for 5 minutes allowing the meat to relax & absorb the juices on the cutting board before serving.
How to prepare Iberico Pork Rib Fingers:
- Place the pack into the fridge to thaw slowly overnight (in a bowl to catch any drips).
- Remove the pack from the fridge & place on a wooden board for 30 minutes to increase the internal temperature.
- Take the meat out of the pack 15mins before cooking, trim & rinse under cold water then pat dry with paper towel.
- Apply your preferred seasonings & let them infuse with the meat.
