Traditional Pork Sausages:
Our expert butchers in production use only lean shoulder meat & the white fat from the back of the sirloin to ensure that our Traditional Pork Sausages are gristle free with a consistent meaty texture. The coarse texture of the muscles in the shoulder has the best flavour when minced because, in combination with the smooth texture & flavour of the added fat makes for a really juicy, tasty sausage.
Once the ingredients have all been added to the meat, we then start the blending process adding a little rusk & water to help it all bind together. Once the correct consistency has been reached, the meat is then fed into only natural sausage casing or skins to make sure you have the perfect “snap” or bite when eating them.
Once the sausage skins are filled, they are then linked into a 77 gram, 12 cm long, thick sausage. We use the same method to make all our sausages; Cumberland or Boerewors, because it is a method that guarantees great results in the kitchen. There are many different types of commercial sausages available to buy & most are made just for the profit or to offer just a cheap sausage.
We are able to make a Traditional Pork Sausage that is high quality & reasonably priced because we make ours in larger volumes buying the raw ingredients at a better price. We do not compromise on the quality of the meat or ingredients because we want our customers to save money & enjoy eating our Traditional Pork Sausages.
When you cut into one of our Traditional Pork Sausages, you will know the difference from an ordinary commercial sausage immediately; there is more true quality meat, no lumps & the aroma from the sausage is delicious. Just as a sausage should be!
Once our sausages have been made, they are then hung overnight in a very cold chiller to let them “set up”. This means that the seasoning has a chance to infuse the meat enhancing the flavour. Our 6 pack sausages are packed & sealed within minutes of removal from the chiller before freezing down to ensure we deliver the best natural flavoured sausage to your door.
Great quality pork is an excellent source of vitamins, minerals & protein, as we only use lean shoulder meat to make our sausages, they are nutritious & tasty. Our production facilities are first-class & are monitored daily during operation by onsite health officials. This means that your products are safe & made in the correct optimum conditions. The production is all temperature controlled to reduce any risk of bacteria, & to stop the meat from losing its natural juices. The natural juices of the meat help enhance the taste of the sausage & improve the flavour during the overnight “set up” in the chillers.
The hygiene of our facilities is maintained during production with all staff wearing protective clean clothing, & after when a full deep clean is conducted daily.
The packaging used for our sausages is fully recyclable & through our customers recycling responsibly at home, we aim to reduce our carbon footprint as much as possible. We are always looking for improved recyclability in our packaging, but product safety is first! There are many breeds of pigs in the world, each with different characteristics, some large fatty ones, to small very lean types. Our choice of pig is the Pietrain Pig because it is a low cholesterol breed that has fantastic meat to fat ratio that has excellent flavour with guaranteed results in the kitchen.
Having access to a large volume of a good grade, perfect sized pork sides to choose from on a daily basis enables us to create the consistent “Restaurant Quality” pork cuts that people have come to expect from the Sherwood brand. We have a daily delivery of pigs to the production facilities from long-standing local countryside farms in Belgium & Northern France.
Our select breed of pigs gets the name Pietrain from the small village of “Pietrain” in the Wallonia region of Belgium where they mainly originated from.
