These Braising Joints are fully prepared & netted by our expert butchers from Irish Grass Fed Beef. Braising Steak is great for slow cooking, breaking the meat fibres down becoming very tender. The preferred cut we use is “LMC” as it is a single muscle with good lean meat.
The LMC is an acronym for “Leg & Mutton Cut”. This cut is out of the Beef Shoulder or Fore Quarter close to the Chuck Steak underneath the Jacobs Ladders.
How do we cut Beef Braising Steak Slow Roast Joints?
We cut them from a portion of the Beef LMC (Leg & Mutton Cut).
To create our Braising Steak joints to a more manageable family sized portion we start with the Wholesale LMC primal cut. This is cut from underneath the Beef Jacobs ladders along a seam of fat next to the Brisket. The LMC is then trimmed down by removing any gristle & gelatinous fat, the Silver skin is taken off the underside next to leave a ready to cook piece. The Beef Joint is then netted around the outside, holding the meat together when cooking as a whole piece.
Having the Braising Steak as a finished piece freshly packed & frozen gives better value for money because there is no waste to trim off & there isn’t much shrinkage when cooking.
All our meats are chilled overnight until the core temperature of the carcasses are under 3°c, this reduces any natural blood loss (prevents the meat from becoming dry & tasteless). The low temperatures help reduce the growth of any natural bacteria, making for fresher tasting meat.
All our production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All refrigerated air is filtered in production rooms, the butchers & packing staff wear fully protective clothing, these precautions reduce natural bacteria. How do we pack our Beef Braising Steak?
We Vacuum Seal our Braising Steak as single packs.
To keep our Braising Steak as fresh as possible it is cut & packed in under 5 minutes in production direct from the abattoir. We put our Braising Steak Joints into Freezer Friendly Recyclable Pouches, these protect the meat from cross contamination from other foodstuffs when stored in a domestic fridge. Once packed they are labelled with full farm to Fork Traceability. The Beef Braising Steak Joints are either boxed up for wholesale orders or put into reusable plastic crates, then “Blast Frozen” to -25°c overnight giving the meat a 24 month frozen shelf life when kept at -18°c.

- Season the meat all over before cooking, leave for 30 minutes top let this infuse with the meat.
