Information about Beef Smash Burgers.

The Sherwood Smash Burgers are created in Ireland in wholesale quantities to give better value to our customers at home & the restaurant trade. The choice of cuts & process makes our Smash Burgers consistent in texture & flavour from the first to the last bite. As well as the taste, these offer excellent value for money & convenience in our Recyclable Freezer Packs of 10, so you always have Burgers for easy to make meals. These are amazing when grilled on the Barbecue with that extra Smokey Flavour!

What is in our Beef Smash Burgers?

The 2 Beef Cuts in our Smash Burgers are; Packer Brisket & Flank.

There is 98% meat & 2% Seasoning. The best Beef Burgers have the taste of the natural Beef with the seasoning only adding to the experience. The select Beef cuts are trimmed & prepared by our expert butchers before sending into the Burger Production Room to ensure that they have the right amount of fat & NO GRISTLE.

How do we make Beef Smash Burgers?

To make Smash Burgers we select & trim good quality Beef Briskets fresh from the cutting room, adding trimmed Boneless Flanks (for the added fat).

The Brisket cuts & Flanks are cut into smaller sized chunks before being ground up to a chunky consistency. The minced meat is then added to a mixing bowl where the 2% of the American Seasoning is added & blended into the meat. The Burger meat mix is kept very cold with Liquid Nitrogen passed around the outside of the grinding chamber as it is minced once more to a slightly finer grind.

The cold minced meat now gives the Burgers their characteristic texture & taste that people love. The Burgers are now pressed into ” Burger Pucks” & paced onto a moving rack where they are “Blast Frozen”, this ensures the moisture stays inside the “Smash Pucks”. Making our Burgers in large batches creates the consistent flavour & texture expected by our customers in each batch made. 

The texture of our Brisket Burgers is very consistent with that of a good Beef Mince & can be broken in half before cooking to test there are no stringy bits showing the quality. The colour of our Burgers is not the “Traditional Bright Red” because we don’t add excessive nitrates to the meat, our focus is on the flavour & texture. This is also true of our Pork & Apple Breakfast Burgers , Black Pepper & Sea Salt Burgers .

Sherwood Smash Burgers are a great balance of lean meat & fat offering a burger that doesn’t swim in grease when pink in the middle or eat like cardboard when cooked well done.

How are our Beef Smash Burgers packed?

The Smash Burgers are packed into a clear Resealable Recyclable Bag.

The Burgers are in “Bulk Packs of 10 pieces” with minimal handling to reduce any contamination whilst remaining frozen. The packs of 10 are then labelled will “Full Traceability” from farm to fork, you can see the production dates with frozen expiry dates & batch numbers,  making it easy for you to check dates in your home freezer.

The Burgers are placed into Recyclable Boxes 5 packs per box to reduce packaging, then palletised & placed straight into the freezer at -25°c.

The speed & near frozen temperatures at which our Smash Burgers are made, gives them a 2 year shelf life when stored at -18°c. The benefits of “Blast Freezing” is keeping the meat in perfect condition from fresh. The  Burgers don’t loose any flavour, moisture or texture for 2 years, they taste exactly the same as if they had just been made.

The bags protect the Burgers from other foodstuffs in the fridge, from freezer burn when stored & when in transit to your door. Placing 10 per pack reduces our plastic use by over 70% from previous packaging (much lower than supermarkets), this means less plastic per portion.

We always encourage our customers to “Reuse or Recycle” whenever possible, the clear plastic bags are easy to place into your home recycle bins at home. We are doing everything we can to find ways of becoming “Greener” in production, storage & delivery. Many of the production factories now have renewable energy sources; solar panels, wind turbines, making a much more eco friendly product. Please recycle your plastic bags from your Beef Burgers every time!! 

The production factories are BRCGS / IFS approved & operate under the strictest of conditions. Monitored by on site health vets to ensure all cutting & hygiene regulations are followed at all times. The temperature controlled cutting rooms with filtered air means we can reduce natural bacteria growth & produce safer products with a longer shelf life. We reduce the amount of handling to a bear minimum & all staff have to wear protective gloves.

Provenance of our Beef.

We source all our Irish Grass Fed Beef from farms local to production in Ireland. The slaughterhouses / production plants are constantly supplied with a sustainable supply of top quality cattle. Local farmers have long term relationships with production to ensure continuity of supply all year round.

Our Irish Grass-Fed beef enjoys some of the best green pastures that Ireland has to offer, with the higher than average rainfall there is never a shortage of lush grass for them to enjoy. The welfare of all the cattle is very important not only to the livestock but to the results it brings to the table.

The select choice of breeds we use for our cuts; Charolais, Limousin, Angus, & Hereford, having good confirmation & delivering good yields. Most beef farmers & producers raise their cattle under “Bord Bia” guidelines. All our beef is fully traceable from farm to fork, with all cattle having digital passports, showing farmers details, breed, welfare etc.

How do you use & cook Beef Smash Burgers?

As the name suggests, most people Smash these on the griddle or pan before cooking.

The Smash Burgers can be grilled as in their “Puck Form” but, you need to press the middle of the Burgers first to prevent them rising in the centre. These make excellent “Sliders” to serve as appetizers or finger food at a casual buffet for multiple guests. These have been created to be Smashed to a wider, thinner flat Burger that cooks very fast & can be served in multiples for “Burger Bun Stacking”.

Once the Burgers are thawed out, press your thumb in the middle of the Burger because it will prevent the middle from being undercooked & produce a nice flat evenly cooked burger.

How to prepare your Beef Smash Burgers for grilling;

  • Remove the number of portions needed from the pack (reseal the bag tightly for unwanted ones & place back into freezer)
  • Place the Smash Burgers into a covered container or plate & place into the fridge to thaw slowly (helps the meat retain texture)
  • Once thawed add extra seasoning if preferred, on both sides of the Burger if served as a Slider
  • If serving as Smash Burgers, then squash the Pucks to preferred thickness & diameter, seasoning can added afterwards

Cooking times for Beef Smash Burgers;

  • Pan Med Heat  5 minutes (turning regularly to prevent burning)
  • Air Fried 5 minutes (turn after 2 minutes to keep moist)
  • Barbecue Grilled 5 minutes

Please ensure that your Burgers are cooked all the way through & the meat juices are clear. A minimum temperature of  74°c in the middle of your Burger is recommended for safe eating.

How to prepare your Beef Smash Burgers for grilling;

  • Remove the number of portions needed from the pack (reseal the bag tightly for unwanted ones & place back into freezer)
  • Place the Smash Burgers into a covered container or plate & place into the fridge to thaw slowly (helps the meat retain texture)
  • Once thawed add extra seasoning if preferred, on both sides of the Burger if served as a Slider
  • If serving as Smash Burgers, then squash the Pucks to preferred thickness & diameter, seasoning can added afterwards

Cooking times for Beef Smash Burgers;

  • Pan Med Heat  5 minutes (turning regularly to prevent burning)
  • Air Fried 5 minutes (turn after 2 minutes to keep moist)
  • Barbecue Grilled 5 minutes

Please ensure that your Burgers are cooked all the way through & the meat juices are clear. A minimum temperature of  74°c in the middle of your Burger is recommended for safe eating.

PRO TIP:

Rest your Brisket Burgers on a wooden board covered in a tea towel for 3 minutes before serving. This allows the meat fibres to relax & absorb their natural juices for great results every time.
