How is our Lean Beef Mince made?
Our expert butchers select out whole chuck steak primal cuts & some whole flanks, these are then both trimmed (to remove unwanted gristle) before grinding. The chuck & flank is mixed before the first coarse grind to balance the taste, the second grind of the meat is through a “Fine Plate” on the mincer to give its finished texture.
We choose cuts of beef from the Forequarter or Shoulder to make our Beef Mince because they are more “Fibrous” & breakdown to become more tender during cooking. The coarse meat cuts always have more flavour as they are hard working muscles with a high protein content. The flavour of the mince is a good balance between a bland meaty taste & the overwhelming ( more common ) fatty experience.
